Baked Salmon with Winter Vegetables
Ingredients (Serves 4):
- 4 salmon fillets (about 6 oz each)
- 1 pound Brussels sprouts, halved
- 2 medium carrots, sliced
- 1 red onion, sliced
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions:
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a bowl, toss Brussels sprouts, carrots, and red onion with half the olive oil, rosemary, salt, and pepper. Spread evenly on the baking sheet and roast for 15 minutes.
- Remove the baking sheet from the oven. Push the vegetables to the sides and place the salmon fillets in the center.
- Drizzle salmon with the remaining olive oil and lemon juice. Season with salt and pepper.
- Return to the oven and bake for an additional 12-15 minutes, until the salmon is cooked through and vegetables are tender.
- Serve immediately.
