Baked Salmon with Winter Vegetables

Ingredients (Serves 4):

  • 4 salmon fillets (about 6 oz each)
  • 1 pound Brussels sprouts, halved
  • 2 medium carrots, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss Brussels sprouts, carrots, and red onion with half the olive oil, rosemary, salt, and pepper. Spread evenly on the baking sheet and roast for 15 minutes.
  3. Remove the baking sheet from the oven. Push the vegetables to the sides and place the salmon fillets in the center.
  4. Drizzle salmon with the remaining olive oil and lemon juice. Season with salt and pepper.
  5. Return to the oven and bake for an additional 12-15 minutes, until the salmon is cooked through and vegetables are tender.
  6. Serve immediately.
