Ingredients
- 1 large, sweet potato, cooked and peeled (approx. 3 cups)
- 2 cloves garlic
- 3 tablespoons of tahini
- 1 ½ teaspoon sea salt
- 1 tablespoon freshly squeezed lemon juice
- chopped parsley, paprika, and olive oil, for garnish
Instructions
- Add all the ingredients (minus the garnish) to a food processor.
- Blend until smooth.
- To serve, top it with some fresh parsley, paprika, and a little sea salt. I love a little drizzle of olive oil over my hummus as well – it adds to the flavor and texture.
