Ingredients
- 1 tablespoon extra virgin olive oil
- 1 pound ground turkey (white meat only)
- 2 tablespoons “less sodium” soy sauce
- 1 tablespoon grated fresh ginger
- 2 scallions, thinly sliced
- 1 red jalapeño, halved lengthwise, seeded and sliced into thin half-moons
- 8 cabbage leaves
- 1/2 cup fresh cilantro sprigs
- 1/4 cup (1 ounce) peanuts, chopped
Directions
- In a medium skillet, heat the oil over medium-high heat. Add the turkey and cook, stirring often, until no longer pink, 8 to 10 minutes.
- Stir in the soy sauce and ginger to combine. Then, stir in the scallions and jalapeño.
- Divide the turkey mixture among the cabbage leaves. Top with cilantro and peanuts.
