Cilantro-Topped Salmon


  • 1-1/2 pounds salmon fillets
  • 1/4 cup lime juice, divided
  • 1/2 cup minced fresh cilantro
  • 3 tablespoons thinly sliced green onions
  • 1 tablespoon finely chopped jalapeno pepper
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • Optional: Lime wedges, sliced jalapeños and cilantro sprigs


  1. Preheat oven to 350°. Place salmon skin side down in a 13×9-in. baking dish coated with cooking spray. Drizzle with 1-1/2 teaspoons lime juice.
  2. In a small bowl, combine the cilantro, onions, jalapeno, oil, salt, pepper and remaining lime juice. Spread over salmon. Bake, uncovered, until fish just begins to flake easily with a fork, 20-25 minutes. If desired, serve with lime wedges, jalapenos and cilantro sprigs.
