- 1 ½ cups whole wheat flour
- 1 cup rolled oats
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon salt
- 2 large eggs
- ½ cup unsweetened applesauce
- ½ cup low-fat milk or plant-based milk
- ⅓ cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 large apple, peeled and finely chopped
Instructions:
- Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, mix flour, oats, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk together eggs, applesauce, milk, honey, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped apple.
- Divide the batter evenly among the muffin cups.
- Bake for 18-22 minutes, until a toothpick inserted into the center comes out clean.
- Cool on a wire rack before serving.
