Spiced Apple and Oat Muffins

Ingredients (Makes 12 Muffins):

  • 1 ½ cups whole wheat flour
  • 1 cup rolled oats
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 large eggs
  • ½ cup unsweetened applesauce
  • ½ cup low-fat milk or plant-based milk
  • ⅓ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 large apple, peeled and finely chopped

Instructions:

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, mix flour, oats, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together eggs, applesauce, milk, honey, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped apple.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-22 minutes, until a toothpick inserted into the center comes out clean.
  7. Cool on a wire rack before serving.
