Hearty Beef Stew

  • 2 lbs beef stew meat
  • 3 tbsp extra virgin olive oil
  • 3 cups low-sodium beef broth
  • 2 cups water
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, peeled and sliced
  • 4 potatoes, peeled and cubed
  • 2 stalks celery, sliced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and black pepper, to taste


  1. Heat olive oil in a large pot over medium-high heat. Add beef stew meat and cook until browned on all sides, about 5-7 minutes.
  2. Add onion and garlic to the pot and cook until softened, about 3-5 minutes.
  3. Add beef broth, water, carrots, potatoes, celery, thyme, rosemary, bay leaf, salt, and black pepper to the pot. Stir to combine.
  4. Bring the stew to a boil, then reduce the heat to low and let it simmer for 1 1/2 to 2 hours, or until the beef is tender.
  5. Remove the bay leaf from the pot and serve hot.
