Hearty Beef Stew
This recipe for hearty beef stew is full of nutritious vegetables, protein, and healthy fats. Perfect for the upcoming autumn months!
Ingredients:
- 2 lbs beef stew meat
- 3 tbsp extra virgin olive oil
- 3 cups low-sodium beef broth
- 2 cups water
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 4 carrots, peeled and sliced
- 4 potatoes, peeled and cubed
- 2 stalks celery, sliced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and black pepper, to taste
Instructions:
- Heat olive oil in a large pot over medium-high heat. Add beef stew meat and cook until browned on all sides, about 5-7 minutes.
- Add onion and garlic to the pot and cook until softened, about 3-5 minutes.
- Add beef broth, water, carrots, potatoes, celery, thyme, rosemary, bay leaf, salt, and black pepper to the pot. Stir to combine.
- Bring the stew to a boil, then reduce the heat to low and let it simmer for 1 1/2 to 2 hours, or until the beef is tender.
- Remove the bay leaf from the pot and serve hot.
